Do you know of any schools that would not require me to cook meat?Article continues below Answer:The Natural Gourmet Cooking School in New York City has a one or two year professional program to train people to become natural foods chefs. Real Food Daily has employed many graduates of this program in our restaurant kitchens. These cooks have brought passion and culinary skill to our gourmet whole food cuisine.In Boulder, Colorado I have heard that Joanne Salztman teaches a series of creative whole foods cooking classes. She authored one of my favorite cookbooks entitled Amazing Grains. A note from a VegFamily visitor, Lisa Wolff: In addition to those listed in your answer, The Restaurant School in Philadelphia offerred a "Whole Foods" curriculum. It was chaired by Christina Pirrello of the PBS show, "Christina Cooks". She's macrobiotic so she has fish recipes in her cookbook but the classes I took were 100% vegan. She not only focused on the basics you'd expect in cooking courses but spent significant time discussing the "energy" available from different foods. Her husband Robert also helped teach my class and was really interesting as well... If your reader can't make it to the school, her cooking TV show is usually vegan and can be found on most PBS stations... |
