Where can I get some good vegan crock pot recipes? And can you suggest some things that cook well in a crock pot?

Answer:

Using a crock pot or slow cooker, as they are sometimes referred to, are excellent for those people who hate to cook or feel that they don't have enough time in their hectic schedules to prepare home-cooked meals. Just simply fill it up with your desired ingredients, plug it in, set the setting, and let the crock pot do all of the work for you. They are a very efficient way of preparing healthy, low fat meals with little effort on your part.

I like to cook beans, vegetables, soups, stews, and one pot meals in mine. You can easily adapt your own recipes for the crock pot. I do suggest cutting back or holding back on some of the liquid called for in the recipe because the contents are kept covered while cooking, there is very little evaporation when cooking in a crock pot, and you may not need to use all that was called for in the original recipe.

Try searching the net for recipes to suit your personal tastes. Through a quick search, I found http://www.saraskitchen.faithweb.com and saw various bean and vegetarian sections that contained some delicious suggestions, and most in the vegetarian section appeared to be vegan.
