Question:

How long do commercial vegan "dairy" products, like Nayonnaise and soy or rice based cheeses stay fresh after opening?

Answer:

Most commercially made soy and rice based mayonnaise will last 2-3 weeks in the refrigerator after opening. But as a general rule it is always best to smell and look at the visual appearance of a product before using. You can also taste a little bit, if desired, before using it. As we say in the foodservice biz, "When in doubt, throw it out." If the odor, color, or taste doesn't seem right, don't use it.

Homemade soy and rice-based mayonnaise will last in the refrigerator for 7-10 days, but it usually doesn't linger that long in mine, as I always plan a use for it before whipping up a batch. FYI, you can search for "mayonnaise" on my site at http://www.veganchef.com and you will find recipes for a soy mayonnaise and an almond mayonnaise which I use in many of my vegan recipes.
