I can't say enough about Lindsay Nixon, the Happy Herbivore. This girl is amazing and she is a fabulous, wonderful cook. I have recently had the privilege of diving into her first two cookbooks, The Happy Herbivore and The Everyday Happy Herbivore and these two books are my all time fave vegan cookbooks. I reach for them daily and I have yet to be disappointed by any of the recipes. Not only are her recipes easy to make, but they use normal ingredients that you can find anywhere and they are all super healthy and low fat or totally fat free. The recipes are full of flavour and don't take hours to prepare or cook. Her cookbooks are also beautiful to look at and flip through, and are made the way cookbooks should be. Nice thick glossy pages, everything in color and lots of full page photographs.
She also has made it even easier to find exactly what you're looking for by using special icons for each of her recipes that indicate things like soy free, prepare in 30 minutes or less, fat free, etc. Lindsay covers pretty much every food category and has tons of delicious recipe ideas for breakfast foods, muffins, breads, soups, stews, burgers, wraps, tofu & vegan meats, pasta, casseroles, grains, beans, veggies, desserts, dips, finger foods, sauces, spreads, condiments and more!
Both books feature absolutely delicious meals. And the Kidney & Quinoa burger from the Everyday Happy Herbivore book is one of my all time favourite veggie burgers. I highly recommend these books for anyone no matter what your cooking expertise is...from novice to expert. These books would also be a great gift for anyone...vegetarian or not.
If you're a new vegetarian or vegan, make these books on your must have list. There are a lot of very complicated, long winded veg cookbooks out there that can be a little discouraging. Lindsay makes plant based meal planning and cooking so easy!
While I write this review Lindsay is currently working on her 3rd cookbook, Happy Herbivore Abroad which will be available towards the end of 2012 and is available for pre-order through Amazon.com. I can't wait to try this one too!
