Lean and Luscious and MeatlessBefore becoming vegans, this book sat on our shelf mostly unused because cooking was a chore and neither Steve nor I spent much time cooking anything from recipes or cookbooks. But when we became vegans we decided to see which of our cookbooks would still be useful to us. Lean and Luscious and Meatless is a vegetarian cookbook, however there are a plethora of wonderfully delicious and tasty vegan recipes in there. And many of the dairy recipes can easily be converted to vegan recipes by either leaving out the cheese or substituting with vegan ingredients.

I am so impressed with the quality of the food that comes out of these recipes that I simply had to review it so everyone would have the opportunity to find a little gem of a cookbook that doesn't have the telltale word, "vegan" in it.

Some of our favorite recipes which you simply must try are: Southwest Potato Lentil Stew, Turkish Stew, Oriental Green Beans with Peanut Sauce, Stir Fried Green Beans with Pine Nuts, Thai Peanut Noodles, Creole Corn, and the Apple Gingerbread Bars. I don't even think I could pick a favorite recipe. They are all so tasty.

This book, in its second edition, is definitely one of my all time favorites. Buy it today, try the recipes, you WON'T be sorry.
