Vegan Nutrition with Jill Nussinow, MS, RD

Jill NussinowJill Nussinow is a Registered Dietitian, culinary educator, cookbook author, speaker and consultant and all around proponent of a plant-based diet. She teaches vegetarian and vegan cooking at Santa Rosa Junior College in California and other places around the US. She has a son who is almost 15. One of her greatest joys is sharing her enthusiasm for vegetables and pressure cooking with anyone who will listen.

I have been tossing around the idea of taking on a vegetarian diet to start and possibly vegan later on down the line. My reasons are my own, but one of the main being it?s a lot healthier than the lifestyle I live right now. Can you give me any suggestions as far as literature or supplements I should look into so I start off on the right track?

My best suggestion is to set a goal of eating vegetarian only for at least a certain number of days a week. Once you adjust, you can switch completely. Take a look around this site for information, the Vegetarian Resource Group www.vrg.org, as well as reading the The Physician?s Committee for Responsible Medicine has a great Vegetarian Starter Kit www.pcrm.org/health/veginfo/vsk/index_new.html.

If you follow the ideas suggested, you will not need any supplements until you decide to go vegan. At that point, you will need a consistent source of Vitamin B12, which is easily found in supplement form.
