Do any of you eat a mostly raw foods vegan diet?

It is a goal of mine and my husbands to eat more raw foods. We have friends who are vegan and 75% raw. It takes lots of time to prepare variety and eat more than salad. They use lots of seeds and nuts soaked. They also have no kids yet. I think as I find dishes we like they will become more and more a part of our diets. I actually believe it is the way to go, but it also seems much more challanging. VM
Yeah...it is a bit more challenging. Around here, though, being vegan is quite a challenge itself! We live in a smaller farming area, where there aren't many resources locally. Luckily. though we do have a food coop and a couple of ok restaraunts.
The grocery stores are finally getting more in stock too.
We have a four-year-old and she eats quite a bit more cooked foods than us. But luckily she loves her fresh fruits and veggies too. We actually are not to our goal quite yet either. we also want to eat 75% raw. We do really good some weeks and then the next week we slack off and make some easy meals that are cooked.
There are a few good cookbooks out there that are mostly raw recipes. I also would love to share some of our favorite recipes with you if you are interested.
We eat salads ALOT but try to vary the ingredients so we do not get bored.

(PS - I noticed that you said you live in the Chicago area..what part? We live near the Quad Cities)
