Lindsay Nixon’s latest cookbook Happy Herbivore Light & Lean: Over 150 Low-Calorie Recipes with Workout Plans for Looking and Feeling Great combines her tasty low calorie recipes with a simple yet effective workout plan that can be done without joining a gym. This book, like all of her others does not disappoint. In this book she introduces readers to Caloric Density and the “100 Factor”, two keys for staying healthy and losing weight if needed. She covers all the bases here with over 150 recipes that are all 300 calories or less per serving for all types of meals.

The table of contents is broken up in the usual way by meal type but it is also divided up by caloric value to make it easy to find just what you’re looking for. All recipes feature a complete breakdown of nutrition (calories, fat, carbs, protein, fiber, sugar, even Weight Watchers points), and because of the rise of food allergies, most can be made soy free or gluten free. Make sure to try her Lentil Joes (the vegan counterpart to Sloppy Joes) on page 59. Absolutely delicious! We love veggie burgers in my family and my children loved her Pizza Burger recipe on page 73. In fact she has six amazing vegan burger recipes in this book that all call for simple ingredients and are easy to prepare.

Lindsay is definitely well known for her amazing variations on veggie wraps and bowls and she has many wonderful combinations in this book too. Her Cabbage Soup recipe on page 107 is probably the one recipe I make most often. It is so easy to make, makes a very generous quantity and always has lots of leftovers. It is a huge hit with my family. The fitness guide is perfect for those who don’t have a lot of time…which is probably most of us! With detailed instructions and pictures she features a nice selection of exercises with multiple variations for each, a guide to calorie burning with everyday activities like housework, sports and just getting outside doing regular things you normally would do.

If you love the Happy Herbivore, or if this is the first time you’re hearing about her, you definitely want this book for your collection. It is a must have for healthy and extremely simple yet delicious vegan cooking.
