Pecan Sweet Potatoes

This lightened-up take on the classic holiday sweet potato casserole is spiked with chunks of pineapple and topped with toasted pecans. Might be a first time trying pineapple with sweet potato but its worth the try, you will love this!

Ingredients

  • 4-6 sweet potatoes
  • 1/2 cup whole pecans
  • Brown rice syrup
  • 1/2 can pineapple chunks, drained
  • Orange juice

Instructions

  1. Bake sweet potatoes until soft. Remove skin and mash in bowl.
  2. Add pineapple chunks and some orange juice to desired consistency. Mix together and spoon into serving dish. Flatten top smooth.
  3. In separate bowl, drop pecans into some brown rice syrup and mix to coat. Then arrange nuts on top of mixture for decoration.
