Nothing is better than fresh perogies, stolen from the bowl just after it has been cooked. This vegan recipe is to die for!
- vegetable broth
- 2 onions
- egg replacer
- 2 cups flour
- 1 tsp salt
- 3/4 cup water
- Peel potato and boil.
- When done whip with vegetable broth and pepper. Set aside to cool.
- Meanwhile cut onions into half inch slices and rinse sauerkraut, melt a stick(or less) margarine in large frying pan. Sauté onion until slightly soft, add kraut and brown really well. When done add to potatoes.
- Add 1½ tsp of egg replacer to water mix and add to flour. Do not over mix dough. Divide dough in half and roll out to about 1/4 inch thick. Cut into 3 inch circles and put potato mixture in center. Fold in half and press together (adding water to one edge helps stick together). Add to boiling water for about 3 mins.
They can be eaten just like that our you can sauté them in more margarine and onion until they are slightly brown. Enjoy!
