Pina Colada Cheesecake

Ever tried a Pina colada cheesecake? Well you're missing out! This dessert is a perfecty fluffy tropical after dinner treat!

Ingredients

  • 1 1/4 cup canned pineapple (in its own juice)
  • 1 cup raw cashews
  • 4 oz melted coconut butter
  • 1/8 cup agave nectar
  • 1 tablespoon pineapple juice
  • 1 1/2 teaspoon vanilla extract
  • Crust
  • 1 cup raw almonds
  • 4 pitted dates
  • 1/2 teaspoon vanilla
  • pinch of salt
  • cinnamon to taste
  • Approx1 tablespoon flax seed oil

Instructions

  1. Blend all of the ingredients in a vita mix or high speed blender until completely smooth. For more texture,
  2. add around 1/2 more pineapple after the mixture is blended
  3. Crust
  4. Grind nuts in a food processor until finely chopped, add rest of ingredients, and blend well. Press into the bottom of a pie plate to form shell.
  5. Pour filling into crust and refrigerate until firm. (put in freezer to chill quicker.)
