Amy's Black Bean Enchiladas

Amy's EnchiladasPeople often wonder what foods we really eat in our home. They want to know what we buy weekly. Well, Amy's Black Bean Enchiladas are one of the products you can nearly always find in our freezer.

Amy's has an extensive line of vegetarian foods, but not all of them are vegan so read the labels carefully. The black bean enchiladas contain black beans, corn, tofu, veggies, and are covered in a delightful, and somewhat spicy, Mexican enchilada sauce. It's not too spicy though, so don't worry.

We eat the enchiladas with some tofu sour cream, and sometimes some guacamole. But they taste excellent on their own, too. You can even buy this in family size portions (7 to a box!) and save money. Our toddler loves these enchiladas, and they are so fast to make; just 5 minutes in the microwave. There are no GMOs in the product either, which is wonderful.

You should be able to find these in your health food store, and I've seen them popping up in main stream markets in our neighborhood as well. Try them, I'm sure you'll like them! Visit the Amy's Kitchen website for more vegan products!
