Vanilla Crunch Granola

Looking for a great granola recipe? Soy yogurt topped with this crunchy vanilla granola is a great breakfast or afternoon treat.

Ingredients:
  • 1 cup steel-cut oats
  • 1 cup rolled oats
  • 1/4 cup slivered almonds
  • 1/2 cup chopped walnuts
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1/3 cup maple syrup
  • 1/4 cup oil
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup raisins
  • 1/4 cup unsweetened shredded coconut

Preheat oven to 350 degrees.


In a large mixing bowl, combine steel-cut oats, rolled oats, almonds, walnuts, sunflower seeds, maple syrup, oil, vanilla, and salt. Spread on baking sheet. Bake 20 minutes or until golden brown, stirring every 5 minutes. Remove from oven and cool. Put granola in bowl and stir in the raisins and coconut. Store in airtight container up to 1 month.

Makes about 4 cups
