In a large, non-stick skillet, sauté the peppers and other raw vegetables in the broth until they begin to soften, about 10 minutes. Add the rest of the ingredients, except the macaroni and cook until the vegetables and the mock chicken are tender. Fold in the pre-cooked macaroni and let it all get heated through. Serves 2.
