Vegan Recipes - Entrees

MacMulligan

Ingredients:
  • 1/4 cup vegetable broth
  • 1 green bell pepper, seeded and chopped
  • 2 carrots, sliced
  • 1/2 cup sliced scallions
  • 2 cloves garlic, minced
  • 1 yellow onion, chopped
  • 2 Tablespoons olive oil
  • 1 14-oz. can whole tomatoes, chopped with the juice
  • 1 cup soy mock chicken
  • 1 teaspoon dried sweet basil
  • 1/2 teaspoon oregano or dried thyme
  • 1 teaspoon paprika
  • salt to taste
  • 2 cups pre-cooked macaroni
Directions:
In a large, non-stick skillet, sauté the peppers and other raw vegetables in the broth until they begin to soften, about 10 minutes.

Add the rest of the ingredients, except the macaroni and cook until the vegetables and the mock chicken are tender.

Fold in the pre-cooked macaroni and let it all get heated through.

Serves 2. (Just add a nice bread and a good salad!)
