Green Beans and New Potatoes Stir-fry

Do you have a large non-stick frying pan? Then you can cook all this at once and the flavors will mix better. Otherwise just separate the beans and potatoes and reuse the same pan.
  • Green beans (grab one handful per person, be generous)
  • New, small potatoes (a few per person)
  • Olive oil for cooking
  • Rosemary - a pinch if dried or a small fresh sprig
  • Salt and pepper to taste

    Directions:
    Wash produce well, pat dry with paper towers. Cut off the ends of the green beans and slice them in half. Cut the new potatoes into round slices. If cooking together, the trick is to have both veggies require the same amount of time - potato slices of 3 mm (1/8'') should be about right.

    Throw everything into the pan. Drizzle with olive oil. Fry over medium heat, take care not to smash the potatoes when stirring. Add the rosemary, salt and pepper after a few minutes. Cook for around 10 more minutes, until the potatoes are done and the beans start to get soft.

    Goes well with polenta.
