Vegan Recipes - Side DishesStrawberry Balsamic BBQ SauceThe Orient brings us many wonders of the culture and foods. A simple one to prepare and probably everyones favorite, is Baba Ghanoush. This strawberry balsamic glaze is the perfect "sweet 'n sour" sauce for your early summer barbeques. Later in the summer, substitute blackberries, peaches, or plums for the strawberries, or a combination of them for a fruity twist. Ingredients: 2 tablespoons olive oil plus additional for brushing grill 2 tablespoons finely chopped shallot 1/2 garlic clove, minced 1 teaspoon finely chopped fresh chives, tarragon or chives 1 pint strawberries, stems removed, rinsed and halved 1 tablespoon agave nectar or other desired sweetener 2 tablespoons balsamic vinegar Salt and ground black pepper to taste Directions: Heat 1 Tablespoon oil in a medium non-stick skillet over moderate heat. Add the shallots, garlic, and chives and cook, stirring often, until shallots are softened, about 2 minutes. Add strawberries and the agave nectar (or your sweetener of choice) and cook, tossing or stirring here and there, until the water evaporates to a few tablespoons, about 3 minutes. Deglaze the pan with the vinegar and simmer until thickened and syrupy, about 4 minutes. Adjust seasoning with salt and pepper. Submit a Recipe |
