Vegan Rich and Creamy Frosting

frostingHow can I make a creamy frosting that isn’t just a watery glaze? I want it to be rich and creamy.

 

There are several natural and healthy ingredients you can use to create frostings. Firm silken tofu will produce a creamy icing. Using agar agar, kuzu or arrowroot to thicken sweet liquids or have them ‘set up’ is another great way to create a rich frosting. Also, nut butters like cashew or sesame can produce a creamy effect. All of the above when used as a base need fruit, spices, chocolate/carob/cocoa and sweeteners added to enhance the finished product.

Here’s a rich carob icing from the VegFamily Kitchen:

Rich Carob Icing

  • 1 1/2 cup raw cashews
  • 1 pack of silken tofu
  • 2 teaspoons vanilla
  • 2 teaspoons almond extract
  • 1/2 cup maple syrup
  • 1/2 cup brown rice syrup
  • 3/4 cup carob chips

Blend cashews, milk, vanilla, and almond extract in blender until smooth. Add maple syrup and brown rice syrup. If too thick add some soymilk. When blended well pour in small pot. Add carob chips and stir over low heat until melted. Chill overnight.
