Royal Rice

royalriceWith a description like “Grown in the fertile soil of the Himalayan foothills and nourished by the pure water from the highest snow-covered peaks in the world.” can you imagine a rice more enticing? The VegFamily kitchen received three different types of Royal rice from LT Foods Americas – Basmati, Jasmine, and Arborio. Being major rice fans, this was a popular offering and right away we went for the basmati.

 

Basmati rice is known for its popcorny-type fragrance and long slender grains that cook up fluffy and separate, It’s our favorite with stirfry, steamed vegetables and all by itself. This particular brand delivered a pack of flavor and made us think of its enticing description while we ate it – snowcovered mountain caps, foothills, and pure water. It definitely has that authentic basmati taste and cooked up so well we barely had time to get our veggies ready to serve by the time it was done.

Jasmine  – another long grain rice definitely popular in Asia. This one has a buttery, slightly sweet fragrance (gets is name from the flower) and went really well with our sauteed peppers and mushrooms. It was actually my first time trying jasmine rice (embarassed) and I must say I find it quite nice! I’ve always been a basmati fan but this one won me over.

Arborio is an Italian short grain rice and known for its stickiness. It’s used to make risotto (yumm!) and rice pudding, which is what we made with it for this first time try.

 

Arborio Rice Pudding

Ingredients:
1 cup of water
dash of salt
tablespoon of coconut oil
1/2 cup arborio rice
2 cups vanilla almond milk
1/4 tsp cinnamon
1 tsp vanilla
Sweetener of choice to taste

Combine in a saucepan, bring to a boil then cover and cook on low till water is absorbed though the rice is not quite done – al dente.

In another saucepan bring the 2 cups of vanilla almond milk, 1/4 tsp of cinnamon,  1 teaspoon of vanilla and your sweetener of choice (approx 4 tablespoons or to taste) to a boil. Stir in the cooked rice, cover and simmer over low heat until the liquid is absorbed, stirring occasionally.
