Pina Colada Cheesecake
Ever tried a Pina colada cheesecake? Well you're missing out! This dessert is a perfecty fluffy tropical after dinner treat!
Ingredients
- 1 1/4 cup canned pineapple (in its own juice)
- 1 cup raw cashews
- 4 oz melted coconut butter
- 1/8 cup agave nectar
- 1 tablespoon pineapple juice
- 1 1/2 teaspoon vanilla extract
- 1 cup raw almonds
- 4 pitted dates
- 1/2 teaspoon vanilla
- pinch of salt
- cinnamon to taste
- Approx1 tablespoon flax seed oil
Crust
Instructions
- Blend all of the ingredients in a vita mix or high speed blender until completely smooth. For more texture,
- add around 1/2 more pineapple after the mixture is blended
- Grind nuts in a food processor until finely chopped, add rest of ingredients, and blend well. Press into the bottom of a pie plate to form shell.
- Pour filling into crust and refrigerate until firm. (put in freezer to chill quicker.)
