Penne with Sweet and Creamy Red Pepper Sauce
Carrots, garlic, basil, tofu and sweet red peppers make a beautiful creamy sauce for penne pasta. This is just the recipe for an amazing sauce to give your pasta meals a kick of flavor
Ingredients
- 1 lb penne rigate
- 1 tablespoon olive oil
- 2 medium carrots, sliced thin (about 1 cup)
- 1 large onion, chopped (about 1 1/2 cups)
- 1 large red pepper, chopped ( about 1 1/2 cups)
- 1 large clove garlic, minced
- 3 tablespoons fresh basil, minced OR 1 tablespoon dried basil (optional)
- 1 (10.5 oz) package silken tofu
- 1 teaspoon salt
- 1/4 teaspoon fresh pepper
Instructions
- Cook pasta and drain. Meanwhile heat oil in a large skillet and saute carrots, onion, red pepper, garlic, and basil until soft. Blend sauteed vegetables and tofu in food processor or blender until creamy. (You may need to do this in 2 different batches depending on the size of your food processor/blender.) Return sauce to pan, heat, and add salt and pepper. Serve over the penne.
