Sarah’s Cookies
We have Sarah to thank for these yummy cookies! Perfect combo of oatmeal, chocolate, and pecans. mmmmmm.
Ingredients
- 2/3 cup soymargarine or vegetable shortening
- 1/2 cup of beet/cane sugar
- 1/2 cup of brown sugar
- 1 tsp vanilla
- 1 tsp baking powder
- 3 tbsp water
- 2 tbsp flour
- 1 1/4 cups whole wheat flour
- 1 tsp baking soda
- 1/3 cup of dairy free chocolate chips/carob chips
- 1/2 cup oats
- about 10 chopped pecans
Instructions
- Preheat oven to 375 degrees f.
- In a large, mix 1 tsp baking powder, 1/2 teaspoon baking soda, 2 tbsp flour and 3 tbsp water until foamy. Beat in soy margarine, sugars and vanilla until light and fluffy. Stir in flour and baking soda until well mixed. Stir in oats, chopped pecans and chocolate chips. Drop by heaping teaspoonfuls onto ungreased cookie sheets.Bake for 8-9 minutes or until lightly browned
- Makes about 4 dozen cookies
