This Thai cucumber salad recipe is EASY to make and brimming with a little spice. We love the utter simplicity of this salad.
- 1-2 large cucumbers, sliced thin
- 1 bunch radishes, sliced thin into discs
- 3 scallions, white part and partial greens, also cut into thin discs
- 1/2 cup chopped peanuts
- 1/2 cup rice vinegar
- 1 teaspoon sugar
- crushed red pepper flakes to taste
- Combine all ingredients. Serve chilled. Best eaten the same day.
